Warm Roasted Vegetable Salad - menu

Dressing

Preheat oven to 200C.

Place potato, sweet potato garlic and oil in bowl, mix through. Place in single layer in baking dish. Season with salt and pepper. Roast for 20 -30 mins.

Turn potatoes, add capsicum and red onion. Roast for 20 mins or until vegies are browned and tender. Set aside.

Place rocket (spinach leaves) in a serving bowl mix through cooked vegies and pour over salad dressing. Toss through and serve.

NB. Optional add some olives with the capsicum and onion .
